I Like Cornbread |

| I'd like to take a minute of your time, and talk about cornbread. |
| My buddy, sanbarhero, is particular about his cornbread. Almost a connoisseur. He says that if you have to use grocery-store cornmeal, his favorite kind is from Save-A-Lot and is called "Buttermilk Corn Meal Mix". I've had his cornbread a lot, and I can tell you, it is some fine stuff. But sanbar says he's fixin' to show me what REAL cornbread is. |
| He has a couple of bags of meal his folks gave him, ground in the country, from corn his Daddy raised, up on his Mama's home place ("up home"). You know, up 171, where sanbar took me huntin'. This cornmeal is the real stuff - ain't been sifted, mixed, or nothing. |

has the recipe written down just like his Mama told him. I watched while he did it. |
| He took 2 cups of the homeground meal and mixed in 3 heaped up tablespoons of self risin' flour, a tablespoon of sugar, and 1 teaspoon each of baking soda and salt, and stirred it up real good. Then he took an old screen wire sifter with a crank handle and sifted it to where it was mixed up real good and didn't have any bran (sanbar calls it "husks") in it. |
| He did the whole two gallons like that, and bagged it back up, and put most of it in the basement refrigerator to keep the weevils out. |

Then sanbar made cornbread. |
| He took a black iron skillet and put some oil in it, and put it in the oven. It was real hot. Then he put some meal in a bowl, with an egg, and stirred buttermilk in it 'til it was a little soupy, but not thin. By then, the skillet and grease was hot. |
| Then he poured a little of the hot grease into the batter, stirred it right quick, and poured it in the skillet. It sizzled and started cookin' right then. Into the oven it went, 'til it was good and brown. Nice color of yellow on the inside. |
